Coffee, Cheese, Cream

Because no one's left comments, so I'm going to put up the ultimate un-appetizing picture up for today's cover photo.

This is another recipe from sorted because I love their website, their recipes, their videos, everything. They have this really interesting project of making starter dough, feeding it, dividing it and passing bits of it along to friends and baking with the rest, so they can then do the same. Spread the love. The starter dough even has a name- Herman. How absolutely adorable.

Digressing once again. Pretty much self-explanatory recipe right here- handful of each nut and some 200g dates, blitz that and press into base. Mix the next lot of ingredients till stiff...

Then it's all about layering half the cream, sponge fingers with strong espresso (of course, I mistyped it as expresso again the first time and had to go correct myself... I learnt it wrong as a kid, it'll stay with me for life). See that picture with the spoon ladling on the excess coffee to the biscuits? Mistake, don't oversoak your fingers or it'll be overly soggy. Soggy tiramisu is a bad tiramisu. Bird poo is actually a fallen sponge finger who had too much coffee.

Then it's all about decorating after putting it in the fridge for about 4 hours. Chop up some strawberries, get a punnet of berries, and give it lots of love.

Tiramisu cheesecake complete. Easy, fast (except the waiting to set part), and really delicious, THOUGH I have a thing about tiramisu... I don't particularly like it because it's not set enough for me. I tend to prefer mousse or cheesecake, something a little less messy, so if I were to make this again, I'll be adding some gelatine, and of course, less coffee to the sponge fingers. 

Looks freaking impressive though. We did well, Sal, considering how we made this on the same day as the Ultimate BLT =D

We did do well, the last of that cake is still in the fridge though.
Day shift is not a week when I can handle coffee after I get home from work, and it just doesn't go with my breakfast :).
